Why are state files so large?

I've learnt that state files are the reason why memory usage decreases
so much after a reboot (when they are deleted). I am surprised how
large they are; sometimes they are as large as a typical GEOS
application. Why are they so big? And do they grow in proportion to
the size of application data? Will my phone book state-file grow and
grow as I add more data?
