I'm not Chinese, but I have Chinese relatives. It's been very useful
to put their addresses in the address book in Chinese characters as
ink, and store them that way. You have to kind of 'be persistent' in
order to get the characters correct, but practice helps...

If you put a name in that's ink, the Address Book asks you what letter
to file the entry under. I use the letter for the anglicization.

F'r example, under L you'll find --|--

/
which is Lee in Chinese. (sorta, allowing for cheezy alphabetics)

Looks impressive as hell when you're scrolling through that part of
the address book and someone's looking over your shoulder.

Doesn't make the rest of the PDA any more friendly to a
Chinese-speaker, but at least it's semi-compatible with Chinese data.
